This is Juan Marie Arzak. He is a living treasure in Spain, and he owns this place. He is full of energy, pacing around Fusion for a solid twelve hours. He is also hysterical, on stage he was the comic relief. After being bombarded with heavy scientific and mathematical concepts for ten hours straight, it was so nice to have JM come on stage and shuffle about, muttering things like "ok, lets do the fruit thing"
Priceless. Then - "lets watch a movie, hey, hey, turn the lights down!"
I get the feeling he could walk around with his pants down and no one would say a thing. Anyway, team Arzak have been toying with 'multi sensorial' dining. On the screen above is an interactive plate. The image on the plate is a movie of tide coming in and out over a shore. And the food on the plate is sea shells, and seaweed, and sea stars, as well as a piece of fish. Of course, only the fish is fish, everything else is something else. Wont go into details.
They also had some other cool gadgets, just prototypes - very hard to apply practically. But, seeing them on stage, I think I will have a very entertaining six months!

Yeah ill explain it, ran out of time yesterdy, i gotta write about adria too - its pretty out there - thats his chief architect explaining just how that building, yeah its a building, is going to convert carbon dioxide into oxygen - some crazy ceramic compound etc
